Oxidation process is a chemical reaction that produces free radicals, leading to chain reactions that may damage cells. The antioxidant effect of vitamin C has been well documented [ 8, 9, 11 ]. Vitamin C is a powerful antioxidant having ability to donate a hydrogen atom and form a relatively stable ascorbyl-free radical. The result is the same: the inactivation of free radicals; however, the kinetics and secondary reactions involved in the process are different. The methods based on SET detect the capacity of a potential antioxidant for the transmission of a chemical species, including metals, carbonyls, and radicals.
